Some people claim that white chocolate is not really chocolate. It certainly doesn’t look like chocolate as we know it, and it doesn’t smell like chocolate. But it is still called white chocolate, isn’t it?
During the chocolate making process, cocoa butter becomes a by-product of the processed cocoa beans. To create white chocolate, the cocoa butter is combined with milk, sugar, and other flavoring ingredients, but not a single cocoa bean is included.
However, if you were to smell cocoa beans and raw cocoa butter, it is the cocoa butter that would have the distinct chocolate smell. The cocoa bean doesn’t smell sweet at all. And our cocoa butter did come from the excellent organic Peruvian cocoa bean.
In “White Gold” we use high quality cocoa butter and whole milk powder. We found a formula, which touches hearts of all people - even of those who do not like white chocolate.
